- 3/4 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 2 large Eggs
- 1 1/2 cups Graham Crackers, crushed
- 1/2 cup Unsalted Butter, melted
- 1 tbsp Lemon Juice
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust by mixing crushed graham crackers with melted butter until resembling wet sand. Press firmly into lined muffin tins.
- Mix the cream cheese in a large bowl until smooth. Gradually add sugar, then mix in the eggs one at a time.
- Add vanilla extract and lemon juice, ensuring everything is well combined.
- Spoon the filling over the crusts, about ¾ full, and bake for 20-25 minutes until edges are set.
- Cool at room temperature for 30 minutes, then chill in the refrigerator for at least 2 hours.
- Serve chilled and optionally top with fresh fruit, whipped cream, or chocolate drizzle.
Notes
For a gluten-free option, use gluten-free cookies instead of graham crackers. Don’t forget to allow the cheesecakes to chill for a creamy texture.
