- 1 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 2 cups mixed dried fruits (raisins, cranberries, candied citrus peel)
- 1 cup chopped walnuts or pecans
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup orange juice
- 1 tablespoon orange zest
- Glaze: 1/2 cup powdered sugar and 2-3 tablespoons orange juice (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with butter or line it with parchment paper.
- Cream the butter with the granulated and brown sugars until light and fluffy.
- Add the eggs, one at a time, ensuring each is well incorporated.
- Incorporate the flour and baking powder mixture gradually into the butter mixture, stirring until just combined.
- Fold in the mixed dried fruits, nuts, orange juice, and zest.
- Pour the mixture into the prepared baking dish, smoothing the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan before glazing. Mix powdered sugar with orange juice, drizzle it over the cooled cake.
- Slice into squares and serve.
Notes
Allow the cake to cool before cutting to prevent crumbling. Serve with whipped cream or vanilla ice cream for an extra treat.
