Description

A delightful Christmas traybake filled with warm spices, candied fruits, and toasted nuts, perfect for sharing during the holiday season.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup mixed dried fruit (raisins, apricots, cranberries)
  • 1/2 cup chopped nuts (pecans, walnuts)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • Optional glaze: 1/4 cup orange juice and 1/4 cup sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a baking tray with parchment paper.
  2. Cream together the butter and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time until fully incorporated.
  4. Combine the flour, baking powder, baking soda, and spices. Gradually add to the butter mixture.
  5. Fold in the mixed dried fruits and chopped nuts until evenly distributed.
  6. Pour the batter into the prepared tray and smooth the top.
  7. Bake for 30-35 minutes until a toothpick comes out clean.
  8. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
  9. For the optional glaze, simmer orange juice and sugar until thickened and brush over the cooled traybake.
  10. Slice and serve, optionally with a sprinkle of powdered sugar on top.

Notes

Use room temperature ingredients for the best texture. Avoid overmixing for a lighter crumb.
