A delightful Christmas traybake filled with warm spices, candied fruits, and toasted nuts, perfect for sharing during the holiday season.

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, at room temperature
- 1 cup brown sugar
- 3 large eggs
- 1 cup mixed dried fruit (raisins, apricots, cranberries)
- 1/2 cup chopped nuts (pecans, walnuts)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- Optional glaze: 1/4 cup orange juice and 1/4 cup sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a baking tray with parchment paper.
- Cream together the butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time until fully incorporated.
- Combine the flour, baking powder, baking soda, and spices. Gradually add to the butter mixture.
- Fold in the mixed dried fruits and chopped nuts until evenly distributed.
- Pour the batter into the prepared tray and smooth the top.
- Bake for 30-35 minutes until a toothpick comes out clean.
- Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
- For the optional glaze, simmer orange juice and sugar until thickened and brush over the cooled traybake.
- Slice and serve, optionally with a sprinkle of powdered sugar on top.
Notes
Use room temperature ingredients for the best texture. Avoid overmixing for a lighter crumb.
