Ingredients

- 12 large pasta shells
- 1 cup shrimp or crab (or a mix)
- 8 oz cream cheese
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- Zest of 1 lemon
- Salt and pepper to taste
- Butter for sautéing
Instructions
- Start by cooking the large pasta shells in salted water until al dente, about 8 minutes. Stir occasionally to prevent sticking. Drain and let cool slightly.
- In a skillet, melt some butter and gently sauté minced garlic and chopped onion until fragrant and translucent. Add your seafood and cook until just pink, then remove from heat.
- Combine the seafood mixture in a bowl with cream cheese, sour cream, and half of the shredded cheese. Mix in chopped fresh herbs and lemon juice until well incorporated.
- Spoon the filling into each cooled shell, being generous. Arrange them snugly in a prepared baking dish.
- Pour any leftover filling and remaining shredded cheese over the stuffed shells, then cover with foil and bake at 350°F (175°C) for about 25 minutes.
- Remove the foil, sprinkle more cheese on top if desired, and return to the oven for an additional 10 minutes until bubbly and golden.
- Allow the dish to sit for a few minutes before serving.
Notes
Feel free to use sautéed mushrooms as a vegetarian alternative to seafood. Adjust spices to your taste.
