- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lemon or orange (optional)
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup semi-sweet chocolate chips
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and butter a 9-inch springform pan.
- Mix the ricotta cheese and sugar in a large bowl until creamy and smooth.
- Add the eggs, one at a time, mixing until incorporated.
- Stir in the vanilla extract and optional citrus zest.
- Incorporate the flour, baking powder, and salt into the ricotta mixture until just combined.
- Fold in the chocolate chips until evenly distributed.
- Bake for about 45-50 minutes, or until golden brown and a toothpick comes out clean.
- Cool for 15 minutes, then dust with powdered sugar and slice.
Notes
For a lighter option, use part-skim ricotta. Can be served with fresh berries or ice cream.
