Ingredients

  • 1 head Fresh Romaine Lettuce, torn into bite-sized pieces
  • 1 cup Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • 1/2 cup Pepperoncini, sliced
  • 4 oz Salami, sliced
  • 4 oz Capicola, sliced
  • 1/2 Red Onion, diced
  • 1/2 cup Olives (green or black), sliced
  • 1/2 cup Italian Dressing or Vinaigrette

Instructions

  1. Prep the vegetables by washing and tearing the Romaine.
  2. Chop and dice cucumber and red onion; pit and slice olives.
  3. Add slices of salami and capicola, folding them for texture.
  4. Include pepperoncini and olives in the mix.
  5. Drizzle Italian dressing over the salad, just enough to coat.
  6. Toss gently to combine all ingredients.
  7. Let the salad marinate for a few minutes before serving.
  8. Garnish with Parmesan or parsley as desired.
