Description
A delightful dessert featuring delicate layers of crepes filled with rich custard and fresh green grapes, infused with the floral notes of jasmine.
Ingredients
Scale
- 1 cup all-purpose flour
- 2 large eggs
- 1 ½ cups milk
- 1 dash of salt
- 1 cup fresh green grapes, halved
- 1 cup whipped cream or pastry cream
- 2 tablespoons granulated sugar
- 1 teaspoon jasmine essence or steeped jasmine tea
- Powdered sugar, for serving
Instructions
- Prepare the crepes: In a mixing bowl, whisk together flour, eggs, milk, and a dash of salt until smooth. Let the batter rest for about 30 minutes.
- Cook the crepes: In a nonstick skillet over medium heat, pour a ladle of batter, swirl to coat the bottom. Cook until edges are golden (about 1-2 minutes), flip and cook briefly on the other side. Repeat.
- Make the filling: Whip the cream until soft peaks form, fold in sugar and jasmine essence.
- Layer the crepes: On a serving platter, place one crepe, spread a layer of filling, top with halved grapes. Repeat until all are stacked.
- Chill and roll: Wrap in plastic wrap, refrigerate for a few hours to set. Slice the roll into pieces.
- Serve and enjoy: Garnish with fresh grapes and a dusting of powdered sugar.
Notes
Ensure your skillet is properly preheated and greased between batches for easy flipping. Letting batter rest is crucial for tender crepes.
