  • 2 1/2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup whole milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin or line with paper liners.
  2. Slice the peaches and set aside.
  3. In a bowl, whisk together flour, baking powder, brown sugar, granulated sugar, and salt.
  4. In another bowl, beat eggs and mix in melted butter, milk, and vanilla extract.
  5. Pour wet ingredients into the dry mixture and stir until just combined.
  6. Fold in diced peaches gently.
  7. Fill muffin cups 3/4 full with batter.
  8. Bake for 20 to 25 minutes, or until a toothpick comes out clean.
  9. Allow muffins to cool before drizzling with caramel sauce.
