- 2 cups cabbage, sliced
- 1 cup carrots, grated
- 1/2 cup radishes, sliced
- 1/4 cup rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- Fresh cilantro, sliced jalapeños, and sesame seeds for topping
Instructions
- Marinate the Beef: In a bowl, mix soy sauce, brown sugar, sesame oil, minced garlic, and chopped green onions. Add thinly sliced beef and let it marinate for at least 30 minutes, preferably in the refrigerator.
- Prepare the Quick Kimchi Slaw: While the beef marinates, slice cabbage, carrots, and radishes. In a separate bowl, whisk together rice vinegar, sugar, and salt. Pour this over the veggies and toss to combine. Let it sit to allow the flavors to meld.
- Cook the Beef: Heat a skillet over medium-high heat and add a little oil. Once hot, add the marinated beef in a single layer. Sauté for about 2-3 minutes or until the beef caramelizes and takes on a lovely color. Make sure not to overcrowd the pan, doing batches if needed.
- Assemble the Tacos: Warm your tortillas in a separate pan, then layer the beef and quick kimchi slaw. Top each taco with fresh cilantro, sesame seeds, and any other desired toppings.

Notes
For a lighter option, use lettuce wraps instead of tortillas. Adjust the spiciness with gochujang if preferred.
