Description

A delicious fusion of Korean flavors in convenient taco form featuring marinated beef and a quick kimchi slaw.

Ingredients

Scale
  • 1 lb thinly sliced beef (sirloin or ribeye)
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 8 tortillas (flour or corn)
  • 2 cups cabbage, sliced
  • 1 cup carrots, grated
  • 1/2 cup radishes, sliced
  • 1/4 cup rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • Fresh cilantro, sliced jalapeños, and sesame seeds for topping

Instructions

  1. Marinate the Beef: In a bowl, mix soy sauce, brown sugar, sesame oil, minced garlic, and chopped green onions. Add thinly sliced beef and let it marinate for at least 30 minutes, preferably in the refrigerator.
  2. Prepare the Quick Kimchi Slaw: While the beef marinates, slice cabbage, carrots, and radishes. In a separate bowl, whisk together rice vinegar, sugar, and salt. Pour this over the veggies and toss to combine. Let it sit to allow the flavors to meld.
  3. Cook the Beef: Heat a skillet over medium-high heat and add a little oil. Once hot, add the marinated beef in a single layer. Sauté for about 2-3 minutes or until the beef caramelizes and takes on a lovely color. Make sure not to overcrowd the pan, doing batches if needed.
  4. Assemble the Tacos: Warm your tortillas in a separate pan, then layer the beef and quick kimchi slaw. Top each taco with fresh cilantro, sesame seeds, and any other desired toppings.
  5. Serve and Enjoy: Gather your loved ones around the table, and let the tacos bring everyone together for a delightful meal.

Notes

For a lighter option, use lettuce wraps instead of tortillas. Adjust the spiciness with gochujang if preferred.
