Instructions
- Prepare the cabbage by cutting it into wedges or thick slices and drizzling with olive oil, salt, and pepper.
- Char the cabbage in a hot skillet for about 4-5 minutes on each side until charred.
- Cook the white bean purée by sautéing garlic in oil, adding white beans and vegetable broth, and simmering for about 10 minutes.
- Blend the mixture until smooth, adjusting seasoning with salt and pepper.
- Plate the dish by spreading white bean purée on a serving plate and arranging charred cabbage on top, garnishing with lemon juice and fresh herbs.
Notes
For a more smoky flavor, try grilling the cabbage. Adjust the cook time for softer cabbage if desired.
