Instructions

  1. Prepare the cabbage by cutting it into wedges or thick slices and drizzling with olive oil, salt, and pepper.
  2. Char the cabbage in a hot skillet for about 4-5 minutes on each side until charred.
  3. Cook the white bean purée by sautéing garlic in oil, adding white beans and vegetable broth, and simmering for about 10 minutes.
  4. Blend the mixture until smooth, adjusting seasoning with salt and pepper.
  5. Plate the dish by spreading white bean purée on a serving plate and arranging charred cabbage on top, garnishing with lemon juice and fresh herbs.

Notes

For a more smoky flavor, try grilling the cabbage. Adjust the cook time for softer cabbage if desired.
