  • Author: chefcletus

  • Yield: 4 servings 1x
  • Diet: Paleo

Description

A delightful blend of zesty lemon, tender chicken, and earthy mushrooms, finished with creamy Romano cheese.

Ingredients

Scale
  • 4 boneless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 8 ounces cremini or button mushrooms, sliced
  • 2 lemons, juice and zest
  • 1/2 cup grated Romano cheese
  • Fresh parsley or basil, for garnish
  • Salt and pepper, to taste

Instructions

  1. Prepare your ingredients: Gather all your ingredients to simplify the cooking process.
  2. Sauté the mushrooms and garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced mushrooms, sautéing until golden and tender, about 5-7 minutes.
  3. Cook the chicken: Push mushrooms to the side and add chicken breasts. Season with salt, pepper, and lemon zest. Sear until golden, about 5 minutes per side.
  4. Add lemon juice: Once the chicken is cooked through, squeeze fresh lemon juice over the pieces to create a luscious sauce.
  5. Finish with cheese: Sprinkle grated Romano cheese over the top and let it melt slightly before serving.
  6. Garnish and serve: Top with freshly chopped parsley and serve warm.

Notes

Taste as you go to adjust seasoning and lemon juice as preferred. Leftover sauce is excellent over pasta or rice.
