Ingredients

- 1 cup Unsalted Butter, softened
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 1 Egg
- 2 1/2 cups All-Purpose Flour
- Zest of 1 Lemon
- 1 cup Raspberries (fresh or frozen)
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and mix until combined. Stir in the lemon zest.
- Whisk together the flour, baking soda, baking powder, and salt in a separate bowl. Gradually add this to the wet mixture until just combined.
- Fold in the raspberries, being careful not to break them too much.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space in between.
- Bake for 10-12 minutes, or until the edges are golden. Allow to cool before transferring to a wire rack.
Notes
For thicker cookies, chill the dough for at least 30 minutes before baking. Always measure ingredients for best results.
