Ingredients

  • 1 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 Egg
  • 2 1/2 cups All-Purpose Flour
  • Zest of 1 Lemon
  • 1 cup Raspberries (fresh or frozen)
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and mix until combined. Stir in the lemon zest.
  4. Whisk together the flour, baking soda, baking powder, and salt in a separate bowl. Gradually add this to the wet mixture until just combined.
  5. Fold in the raspberries, being careful not to break them too much.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space in between.
  7. Bake for 10-12 minutes, or until the edges are golden. Allow to cool before transferring to a wire rack.

Notes

For thicker cookies, chill the dough for at least 30 minutes before baking. Always measure ingredients for best results.
