- 2 stalks fresh lemongrass, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup coconut milk
- 3 tbsp soy sauce
- Juice of 1 fresh lime
- Fresh herbs (such as cilantro) for garnish
- Optional vegetables (bell peppers, snap peas, or broccoli)
Instructions
- Prep the Ingredients: Mix minced garlic, grated ginger, chopped lemongrass, soy sauce, and coconut milk in a bowl. Marinate chicken for at least 30 minutes.
- Cook the Chicken: Heat a skillet over medium-high heat with a little oil. Add marinated chicken and cook until golden and tender, about 5-7 minutes per side.
- Add Vegetables: If using vegetables, add them halfway through cooking time to keep them crisp.
- Finish with Herbs and Lime: Remove cooked chicken and let it rest. Squeeze fresh lime juice over and garnish with cilantro.
- Serve: Serve over jasmine rice or with fresh greens.
