Instructions

  1. Prep the Ingredients: Mix minced garlic, grated ginger, chopped lemongrass, soy sauce, and coconut milk in a bowl. Marinate chicken for at least 30 minutes.
  2. Cook the Chicken: Heat a skillet over medium-high heat with a little oil. Add marinated chicken and cook until golden and tender, about 5-7 minutes per side.
  3. Add Vegetables: If using vegetables, add them halfway through cooking time to keep them crisp.
  4. Finish with Herbs and Lime: Remove cooked chicken and let it rest. Squeeze fresh lime juice over and garnish with cilantro.
  5. Serve: Serve over jasmine rice or with fresh greens.
