Description

Ingredients

  • 1 cup brown or green lentils, rinsed
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 2 cans (14.5 oz) diced or crushed tomatoes
  • 2 cups vegetable broth or wine
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: Heat the olive oil in a large skillet over medium heat. Add the onion and sauté for 4-5 minutes until translucent. Stir in the garlic, followed by the carrots and celery, cooking for an additional 3-4 minutes.
  2. Add the lentils: Stir in the rinsed lentils, allowing them to toast for 1 minute before adding the canned tomatoes and broth or wine.
  3. Season: Sprinkle in oregano, basil, and season generously with salt and pepper.
  4. Simmer: Reduce heat to low, cover, and simmer for 25-30 minutes, stirring occasionally. Add more broth or water if it becomes too thick.
  5. Personalize it: Taste and adjust seasoning as desired, adding fresh herbs or a splash of balsamic vinegar.
  6. Serve: Serve the sauce over your favorite pasta, garnished with fresh basil and optional parmesan cheese.
