  • Mushrooms, sliced
  • Bell peppers, any color, diced
  • Onion, chopped
  • Garlic, minced
  • Cheese (mozzarella or a blend), shredded
  • Italian seasoning
  • Eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown your choice of ground meat in a large skillet over medium heat until fully cooked; drain excess fat.
  3. Add sliced onions and minced garlic; sauté until onions are translucent (about 2-3 minutes).
  4. Stir in mushrooms and bell peppers; cook until soft and fragrant (about 5 minutes).
  5. Season with Italian herbs, salt, and pepper; cook for an additional minute.
  6. Whisk eggs and half of the cheese in a large bowl; combine with skillet contents until coated.
  7. Pour this mixture into a greased casserole dish and top with remaining cheese.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
  9. Cool for a few minutes before slicing; serve hot.
