Ingredients

- Mushrooms, sliced
- Bell peppers, any color, diced
- Onion, chopped
- Garlic, minced
- Cheese (mozzarella or a blend), shredded
- Italian seasoning
- Eggs
Instructions
- Preheat your oven to 350°F (175°C).
- Brown your choice of ground meat in a large skillet over medium heat until fully cooked; drain excess fat.
- Add sliced onions and minced garlic; sauté until onions are translucent (about 2-3 minutes).
- Stir in mushrooms and bell peppers; cook until soft and fragrant (about 5 minutes).
- Season with Italian herbs, salt, and pepper; cook for an additional minute.
- Whisk eggs and half of the cheese in a large bowl; combine with skillet contents until coated.
- Pour this mixture into a greased casserole dish and top with remaining cheese.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
- Cool for a few minutes before slicing; serve hot.
