- 8 oz mushrooms, sliced
- 1 cup chicken broth or white wine
- 1/2 cup heavy cream
- 1 tbsp honey or brown sugar
- Salt and pepper to taste
Instructions
- Prepare the marinade by whisking together garlic, herbs, olive oil, honey, salt, and pepper in a bowl. Coat the pork tenderloin and marinate for at least 30 minutes.
- Sear the pork in a hot skillet over medium-high heat for 2-3 minutes on all sides until golden brown.
- Add sliced onions and mushrooms to the pan, sautéing until softened.
- Deglaze the pan with chicken broth or white wine, scraping the browned bits off the bottom.
- Cook the pork with the liquid for 15-20 minutes, until the internal temperature reaches 145°F (63°C).
- Make the sauce by stirring in heavy cream to the pan juices over low heat.
- Serve the sliced pork drizzled with sauce and pair with your favorite sides.
Notes
Let the pork rest for 5 minutes before slicing to retain juices. Use a meat thermometer to avoid overcooking.
