Ingredients

  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp olive oil or butter
  • 1 onion, sliced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth or white wine
  • 1/2 cup heavy cream
  • 1 tbsp honey or brown sugar
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade by whisking together garlic, herbs, olive oil, honey, salt, and pepper in a bowl. Coat the pork tenderloin and marinate for at least 30 minutes.
  2. Sear the pork in a hot skillet over medium-high heat for 2-3 minutes on all sides until golden brown.
  3. Add sliced onions and mushrooms to the pan, sautéing until softened.
  4. Deglaze the pan with chicken broth or white wine, scraping the browned bits off the bottom.
  5. Cook the pork with the liquid for 15-20 minutes, until the internal temperature reaches 145°F (63°C).
  6. Make the sauce by stirring in heavy cream to the pan juices over low heat.
  7. Serve the sliced pork drizzled with sauce and pair with your favorite sides.

Notes

Let the pork rest for 5 minutes before slicing to retain juices. Use a meat thermometer to avoid overcooking.
