Description

A comforting blend of tender meatballs, earthy mushrooms, and rich sour cream, Meatball Stroganoff is a nostalgic dish that brings together family and friends.

Ingredients

Scale
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Olive oil for cooking
  • 8 ounces mushrooms, sliced
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 12 ounces egg noodles
  • Fresh parsley or chives for garnish

Instructions

  1. Make the Meatballs: In a large bowl, combine ground meat, finely chopped onions, minced garlic, breadcrumbs, and seasonings such as salt and pepper. Mix until just combined and form into meatballs, approximately one inch in size.
  2. Brown the Meatballs: Heat a skillet over medium heat with a drizzle of olive oil. Add the meatballs in batches, cooking until browned on all sides. Remove and set aside.
  3. Sauté the Mushrooms: In the same skillet, add a little more oil if necessary and toss in the sliced mushrooms. Cook until they’re golden and have released their juices, about 5-7 minutes.
  4. Create the Sauce: Once the mushrooms are ready, stir in flour to coat, followed by the beef broth. Bring to a simmer, scraping any bits off the bottom of the pan. Add back the meatballs, cover, and let simmer for 15-20 minutes until the meatballs are cooked through.
  5. Add the Creaminess: Reduce heat to low. Stir in the sour cream until smooth, mixing well until the sauce is creamy and luscious. Season with salt, pepper, and perhaps a sprinkle of fresh herbs.
  6. Toss with Noodles: Cook your noodles according to package instructions. Drain and toss them into the skillet with the stroganoff sauce, ensuring everything is well-coated and heated through.
  7. Serve and Enjoy: Serve hot, garnished with parsley or chives. Enjoy with crusty bread on the side.

Notes

Avoid overcrowding the pan when browning meatballs, and allow the sauce to simmer for deep flavor.
