Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 2 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 tsp red pepper flakes
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 tbsp fresh basil or parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients first. Chop your vegetables, slice the chicken into bite-sized pieces, and mince the garlic and onion.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces and sear until they brown on one side.
  4. Stir in the minced garlic and chopped onion, cooking until fragrant.
  5. Incorporate the bell peppers, zucchini, and mushrooms, stirring until they crisp up yet remain tender.
  6. Season generously with salt, pepper, and red pepper flakes.
  7. Finish with herbs and lemon juice just before serving.
  8. Serve hot, ideally over rice, couscous, or with a salad.

Notes

For substitutions, tofu or shrimp can be used instead of chicken. Use vegetable broth for a vegetarian option.
