- 1 lb boneless chicken (breast or thighs)
- 2 tbsp olive oil
- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 1 tsp red pepper flakes
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 tbsp fresh basil or parsley, chopped
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Prep your ingredients first. Chop your vegetables, slice the chicken into bite-sized pieces, and mince the garlic and onion.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and sear until they brown on one side.
- Stir in the minced garlic and chopped onion, cooking until fragrant.
- Incorporate the bell peppers, zucchini, and mushrooms, stirring until they crisp up yet remain tender.
- Season generously with salt, pepper, and red pepper flakes.
- Finish with herbs and lemon juice just before serving.
- Serve hot, ideally over rice, couscous, or with a salad.
Notes
For substitutions, tofu or shrimp can be used instead of chicken. Use vegetable broth for a vegetarian option.
