Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together flour and baking powder, then gradually add to the wet ingredients, stirring just until combined.
- Scoop the dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes or until edges are lightly golden; cool on baking sheet for a few minutes, then transfer to a wire rack.
- For the frosting, mix powdered sugar with a splash of milk until smooth.
- Decorate cookies with icing, top each with a mini marshmallow, and use candy for eyes and buttons.
- Let the cookies set to allow icing to harden slightly before serving.
Notes
For a dairy-free version, substitute coconut oil for butter; using brown sugar adds a hint of caramel flavor.
