Instructions
- Gather your ingredients: Wash and pit your cherries.
- Prepare the filling: Combine cherries, sugar, lemon juice, almond extract, and cornstarch.
- Make the crust: Roll out dough and cut out rounds for mini pie tins.
- Assemble the pies: Place dough in tins and add cherry filling.
- Bake: Preheat oven to 375°F (190°C) and bake for 25 minutes.
- Cool and serve: Allow to cool before serving, optionally with vanilla ice cream.

Use a combination of sweet and tart cherries for best results. These pies can be frozen after baking.
