- 1 pound mushrooms (cremini, shiitake, or button)
- 1 cup shredded Gruyère cheese
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup heavy cream
- 1 cup vegetable or chicken broth
- 2–3 cloves garlic, minced
- Salt and pepper, to taste
- Fresh thyme and rosemary, to taste
- Pie crust
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, melt the butter over medium heat and sauté the mushrooms until golden brown (5-7 minutes). Add the minced garlic and cook for 1 more minute.
- Sprinkle flour over the mushrooms, stir, and gradually add broth, stirring constantly until thickened. Remove from heat and mix in heavy cream and Gruyère cheese until melted.
- Roll out pie crust and cut into circles for ramekins. Fill each dish with mushroom mixture and cover with crust, sealing the edges.
- Brush with egg wash and bake for 20-25 minutes until the crust is golden brown.
- Let cool slightly before serving.
Notes
For variety, feel free to mix different types of mushrooms or use alternate cheeses.
