Description

Delicious, flaky pot pies filled with earthy mushrooms and creamy Gruyère cheese, perfect for family gatherings.


Ingredients

  • 1 pound mushrooms (cremini, shiitake, or button)
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup heavy cream
  • 1 cup vegetable or chicken broth
  • 23 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh thyme and rosemary, to taste
  • Pie crust

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium heat and sauté the mushrooms until golden brown (5-7 minutes). Add the minced garlic and cook for 1 more minute.
  3. Sprinkle flour over the mushrooms, stir, and gradually add broth, stirring constantly until thickened. Remove from heat and mix in heavy cream and Gruyère cheese until melted.
  4. Roll out pie crust and cut into circles for ramekins. Fill each dish with mushroom mixture and cover with crust, sealing the edges.
  5. Brush with egg wash and bake for 20-25 minutes until the crust is golden brown.
  6. Let cool slightly before serving.

Notes

For variety, feel free to mix different types of mushrooms or use alternate cheeses.
