- 1 pound tubular pasta (penne or ziti)
- 2 cups marinara sauce
- 1 pound ground meat (optional)
- 8 ounces sliced mushrooms (cremini or shiitake)
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- 1 cup shredded mozzarella cheese (or Parmigiano-Reggiano)
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onions and cook until softened, about 5 minutes. Stir in minced garlic and cook until fragrant.
- Add sliced mushrooms to the skillet, stirring occasionally until golden brown. Season with salt and pepper.
- Incorporate ground meat (if using) into the mushroom mixture. Cook until browned, breaking it up with a spatula.
- Pour in marinara sauce, stirring to combine, and let simmer for about 10 minutes.
- Boil a pot of salted water and cook pasta according to package directions to al dente.
- Drain pasta and add it to the sauce in the skillet, tossing to coat.
- Stir in the cheese while the dish is still warm, and finish with fresh herbs.
- Plate your Mostaccioli with additional cheese sprinkled on top, and enjoy with family.
Notes
For a vegetarian version, omit the ground meat and consider adding lentils. Serve with garlic bread and a green salad.
