A refreshing and creamy treat made with ripe peaches and Greek yogurt, perfect for summer gatherings.

- 2 cups fresh peaches, peeled and diced
- 2 cups plain Greek yogurt
- 1/4 cup honey or maple syrup (adjust to taste)
- 2 tablespoons lemon juice
- Popsicle sticks
Instructions
- Prepare the peaches: If using fresh peaches, peel and slice them into small chunks. If they are frozen, let them thaw a bit at room temperature.
- Blend the mixture: In a blender, combine the peaches, Greek yogurt, honey or maple syrup, and lemon juice. Blend until smooth and creamy.
- Pour into molds: Spoon the mixture into your ice cream bar molds, leaving a little space at the top.
- Add popsicle sticks: Insert popsicle sticks into the molds, ensuring they’re stable.
- Freeze until solid: Put the molds in the freezer for at least 240-360 minutes, or until completely frozen.
- Unmold and enjoy: Run warm water over outside of the molds to release your bars easily.

Feel free to mix in granola or add other fruits like mango for variation.
