- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, chopped
- 3 cloves garlic, minced

- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 2 tbsp fresh cilantro, chopped
- Juice of 1 lime
- Olive oil for sautéing
Instructions
- Prep your ingredients: Chop the onions and bell peppers, mince the garlic, and cut your chicken into bite-sized pieces.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the onions and garlic, sautéing until translucent and fragrant.
- Add the chicken pieces to the skillet. Season with salt, pepper, cumin, and paprika. Stir until the chicken is golden brown.
- Toss in the bell peppers and rice, stirring to combine.
- Add the chicken broth and diced tomatoes to the skillet. Bring to a gentle boil, then reduce heat, cover, and let simmer until the rice is tender.
- Fluff the rice with a fork and squeeze fresh lime juice over the top. Garnish with chopped cilantro.
