Instructions

  1. Sauté the aromatics: In a large pot, melt butter or heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Stir in minced garlic, sauté for another minute until fragrant.
  3. Add the diced potatoes and stir to coat.
  4. Pour in the broth and add the corn. Bring everything to a gentle boil.
  5. Simmer: Reduce heat and simmer for 20-25 minutes, stirring occasionally until potatoes are fork-tender.
  6. Stir in the cream and let it heat through.
