Ingredients

  • 8 oz mushrooms, sliced (button or cremini)
  • 14 oz canned diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh spinach or basil for garnish (optional)
  • Grated Parmesan for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and mushrooms, sautéing until mushrooms soften, about 5 minutes.
  2. Pour in diced tomatoes with their juice and broth. Simmer for flavors to meld.
  3. Add spaghetti to the pot, ensuring it’s submerged in the broth.
  4. Season with Italian herbs, salt, and pepper. Stir occasionally and cook for 10-12 minutes until al dente.
  5. Remove from heat and toss in fresh spinach or basil before serving.
  6. Serve in bowls, garnished with grated Parmesan if desired.

Notes
