- 4 cloves garlic, minced
- 8 oz mushrooms, sliced (button or cremini)
- 14 oz canned diced tomatoes
- 4 cups vegetable or chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh spinach or basil for garnish (optional)
- Grated Parmesan for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add garlic and mushrooms, sautéing until mushrooms soften, about 5 minutes.
- Pour in diced tomatoes with their juice and broth. Simmer for flavors to meld.
- Add spaghetti to the pot, ensuring it’s submerged in the broth.
- Season with Italian herbs, salt, and pepper. Stir occasionally and cook for 10-12 minutes until al dente.
- Remove from heat and toss in fresh spinach or basil before serving.
- Serve in bowls, garnished with grated Parmesan if desired.
Notes
For extra flavor, add a splash of balsamic vinegar or red wine when sautéing the mushrooms. Adjust seasoning as needed before serving.
