- 4 Salmon fillets
- 1 cup Orzo pasta
- 2 cups Vegetable or chicken broth
- 2 tablespoons Fresh lemon juice and zest
- 3 cloves Garlic, minced
- 8 oz Mushrooms, sliced (cremini or shiitake preferred)
- Fresh herbs (dill, parsley, or basil)
- 2 tablespoons Olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add sliced mushrooms and stir until golden brown, about 5-7 minutes.
- Pour in the broth, lemon juice, and zest, then bring to a gentle simmer. Sprinkle in the orzo and cook according to package instructions, usually about 8-10 minutes, stirring occasionally.
- Season the salmon fillets with salt, pepper, and lemon juice. Once the orzo is nearly done, lay the salmon on top, cover, and cook for an additional 5 minutes.
- Gently stir and check if the salmon flakes easily with a fork. Plate and garnish with fresh herbs, lemon zest, and black pepper before serving.
Notes
For a vegetarian version, swap salmon for chicken breasts or tofu. Any small pasta can replace orzo if needed.
