  • 1 cup Calabrian chili sauce

  • 1 medium onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the pasta: Bring a pot of salted water to a rolling boil and cook the pappardelle according to package instructions until al dente. Reserve a cup of pasta water and then drain the rest.
  2. Sauté the aromatics: In a large skillet, heat olive oil over medium heat. Add finely chopped onion and minced garlic. Sauté until they turn translucent and fragrant, about 3-4 minutes.
  3. Cook the sausage: Add the ground sausage to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. Add the sauce: Stir in the Calabrian chili sauce and halved cherry tomatoes. Mix well and simmer for about 5-10 minutes until the sauce is heated through and the tomatoes are soft.
  5. Toss in the pasta: Add the drained pappardelle to the skillet, along with a splash of reserved pasta water. Toss everything together gently over low heat until the pasta is coated in the sauce. If it seems dry, add more pasta water until you reach your desired consistency.
  6. Finish and serve: Sprinkle freshly chopped basil or parsley over the top for an aromatic touch. Serve immediately and dig in!

Notes

Cook pasta just shy of al dente, as it will continue to cook when tossed in the sauce.
