Ingredients

  • 3 cups puffed cereal (rice or corn)
  • 1 cup creamy or crunchy peanut butter
  • 1/2 cup jelly or jam (grape or strawberry)
  • 2 cups vanilla ice cream
  • A pinch of salt

Instructions

  1. Start by laying out your puffed cereal in a large bowl.
  2. Mix in melted butter to coat the cereal.
  3. In a separate bowl, stir peanut butter with a pinch of salt.
  4. Spread peanut butter on one side of two ice cream sandwich wafers.
  5. Add a spoonful of jelly or jam on top of the peanut butter.
  6. Place a scoop of ice cream on top and cover with a second wafer.
  7. Coat the outer sides of the sandwiches with puffed cereal.
  8. Wrap each sandwich in plastic wrap and freeze for at least 60 minutes.
