Description

  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon milk or cream (for brushing)

Instructions

  1. Prepare the Dough: Combine flour, salt, and cold cubed butter in a bowl until it resembles coarse crumbs. Gradually add cold water until it comes together. Wrap in plastic wrap and chill for 30 minutes.
  2. Make the Filling: Peel and slice peaches, toss with sugar, flour, and cinnamon, and let it sit for a few minutes.
  3. Roll Out Dough: Roll out the dough to about 1/8-inch thickness on a floured surface and cut circles using a round cutter.
  4. Fill the Pies: Place a tablespoon of the peach mixture in the center of each circle, fold over, and crimp the edges.
  5. Brush and Bake: Brush with milk, sprinkle sugar, and bake at 375°F (190°C) for 25-30 minutes until golden brown.
  6. Cool and Serve: Allow to cool slightly before serving warm.
