- 2 cups fresh peaches, sliced
- 1 pie crust (homemade or store-bought)
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 tablespoon milk or cream (for brushing)
Instructions
- Prepare the Dough: Combine flour, salt, and cold cubed butter in a bowl until it resembles coarse crumbs. Gradually add cold water until it comes together. Wrap in plastic wrap and chill for 30 minutes.
- Make the Filling: Peel and slice peaches, toss with sugar, flour, and cinnamon, and let it sit for a few minutes.
- Roll Out Dough: Roll out the dough to about 1/8-inch thickness on a floured surface and cut circles using a round cutter.
- Fill the Pies: Place a tablespoon of the peach mixture in the center of each circle, fold over, and crimp the edges.
- Brush and Bake: Brush with milk, sprinkle sugar, and bake at 375°F (190°C) for 25-30 minutes until golden brown.
- Cool and Serve: Allow to cool slightly before serving warm.
Notes
For added flavor, experiment with spices like nutmeg or add a hint of lemon zest. Store leftovers in an airtight container for up to 2 days.
