Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg yolk
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1 teaspoon vanilla extract
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread the pecans evenly on a baking sheet and roast for about 8-10 minutes until fragrant.
  3. In a mixing bowl, beat together the softened butter and sugar until fluffy.
  4. Add the egg yolk and vanilla extract, and mix well.
  5. Gradually add in the flour and chopped pecans, stirring until well combined.
  6. Scoop tablespoons of dough onto a lined baking sheet.
  7. Use your thumb to make an indentation in the center of each ball.
  8. Bake the cookies for about 12 to 15 minutes until slightly golden.
  9. Fill each thumbprint with caramel sauce while they are still warm.
  10. Allow the cookies to cool completely on the baking sheet.

Notes

For a dairy-free version, substitute butter with coconut oil. They taste even better the next day as the flavors meld together.
