- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg yolk
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1 teaspoon vanilla extract
- 1/2 cup caramel sauce
Instructions
- Preheat the oven to 350°F (175°C).
- Spread the pecans evenly on a baking sheet and roast for about 8-10 minutes until fragrant.
- In a mixing bowl, beat together the softened butter and sugar until fluffy.
- Add the egg yolk and vanilla extract, and mix well.
- Gradually add in the flour and chopped pecans, stirring until well combined.
- Scoop tablespoons of dough onto a lined baking sheet.
- Use your thumb to make an indentation in the center of each ball.
- Bake the cookies for about 12 to 15 minutes until slightly golden.
- Fill each thumbprint with caramel sauce while they are still warm.
- Allow the cookies to cool completely on the baking sheet.
Notes
For a dairy-free version, substitute butter with coconut oil. They taste even better the next day as the flavors meld together.
