- 1 can (28 oz) crushed tomatoes
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp red pepper flakes (adjust to taste)
- ¼ cup fresh basil, chopped
- ¼ cup fresh parsley, chopped
- 1 medium sweet onion, diced
- ½ cup chicken broth
- Salt and pepper to taste
Instructions
- Heat a generous drizzle of olive oil in a large skillet over medium heat.
- Add diced onions and sauté until they become translucent—about 5 minutes.
- Toss in minced garlic and red pepper flakes, stirring until fragrant, about 1 minute.
- Introduce your chicken pieces to the skillet and sear for about 5-7 minutes on each side.
- Pour in the crushed tomatoes and chicken broth, stirring to mix everything well.
- Bring the mixture to a gentle simmer and reduce heat to low; cover and cook for 25-30 minutes.
- Sprinkle in freshly chopped basil and parsley just before serving.
- Taste the sauce and adjust salt and pepper as desired. Serve over pasta or polenta.
