Description

A spicy and savory Chicken Fra Diavolo that brings warmth and joy to family gatherings.

Ingredients

Scale
  • 1 ½ lbs boneless chicken (breast or thighs)
  • 1 can (28 oz) crushed tomatoes
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • 1 medium sweet onion, diced
  • ½ cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat a generous drizzle of olive oil in a large skillet over medium heat.
  2. Add diced onions and sauté until they become translucent—about 5 minutes.
  3. Toss in minced garlic and red pepper flakes, stirring until fragrant, about 1 minute.
  4. Introduce your chicken pieces to the skillet and sear for about 5-7 minutes on each side.
  5. Pour in the crushed tomatoes and chicken broth, stirring to mix everything well.
  6. Bring the mixture to a gentle simmer and reduce heat to low; cover and cook for 25-30 minutes.
  7. Sprinkle in freshly chopped basil and parsley just before serving.
  8. Taste the sauce and adjust salt and pepper as desired. Serve over pasta or polenta.

Notes

Feel free to adjust the spice level to suit your taste. This dish can be made vegetarian by substituting chicken with hearty vegetables.
