- 3/4 cup granulated sugar
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 1/2 cups graham crackers, crushed
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 325°F (165°C).
- Mix crushed graham crackers with melted butter and sugar until well combined. Press the mixture into the bottom of mini cheesecake molds or muffin tins.
- Beat the cream cheese and sugar together until fluffy, then add in the eggs one at a time, mixing well. Stir in vanilla extract and sour cream.
- Pour the filling over the crusts until they are three-quarters full, leaving some space for rising.
- Bake for about 20-25 minutes or until the edges are firm and the centers slightly jiggly.
- Cool your cheesecakes to room temperature, then refrigerate for at least 3 hours.
