- 1 cup semi-sweet chocolate chips

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the egg and vanilla extract, and beat until fully incorporated.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Combine the dry ingredients with the wet mixture and mix until just combined.
- Fold in the chopped pistachios and chocolate chips.
- Scoop tablespoon-sized dough onto the prepared baking sheet, leaving space in between.
- Bake for 10-12 minutes until edges turn golden brown.
- Cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
For best results, avoid overmixing the dough and ensure your butter is at room temperature. Store leftover cookies in an airtight container for up to a week.
