Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 ½ cups of all-purpose flour, ½ cup of unsalted softened butter, and ¼ cup of granulated sugar in a bowl.
  3. Mix until the texture resembles coarse crumbs; add 1 to 2 tablespoons of cold water until dough forms.
  4. Roll out the dough and press it into a 9-inch pie pan; poke the bottom with a fork and freeze for 15 minutes.
  5. Blitz 1 cup of shelled pistachios in a food processor until finely ground.
  6. Whisk together 4 large eggs, ¾ cup of granulated sugar, and 1 teaspoon of vanilla extract in a large bowl.
  7. Fold in 1 cup of heavy cream and the ground pistachios.
  8. Pour the filling into the prepared crust; bake for 35-40 minutes until the edges are set and the center jiggles slightly.
  9. Cool completely and chill in the fridge for 2 hours.
