Description

A warm and comforting roasted delicata squash dish glazed with pomegranate molasses, offering a perfect balance of sweetness and acidity.


Ingredients

  • 2 Delicata Squash
  • 2 tbsp Pomegranate Molasses
  • 2 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • Fresh Herbs (Thyme and Sage)
  • Salt and Pepper to taste
  • Crunchy Nuts (Walnuts or Pecans)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the delicata squash in half lengthwise and remove the seeds.
  3. Cut the squash into half-moon shapes, about one inch thick.
  4. Add the slices to a bowl, drizzle with olive oil, and toss with garlic, salt, and pepper.
  5. Pour in the pomegranate molasses and toss again to coat.
  6. Spread the squash pieces on a baking sheet in a single layer.
  7. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
  8. Remove from the oven and toss with freshly chopped herbs before serving.

Notes

For an elegant presentation, drizzle extra pomegranate molasses and add feta or goat cheese on top.
