- 2 Delicata Squash
- 2 tbsp Pomegranate Molasses
- 2 tbsp Olive Oil
- 3 cloves Garlic, minced
- Fresh Herbs (Thyme and Sage)
- Salt and Pepper to taste
- Crunchy Nuts (Walnuts or Pecans)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the delicata squash in half lengthwise and remove the seeds.
- Cut the squash into half-moon shapes, about one inch thick.
- Add the slices to a bowl, drizzle with olive oil, and toss with garlic, salt, and pepper.
- Pour in the pomegranate molasses and toss again to coat.
- Spread the squash pieces on a baking sheet in a single layer.
- Roast for 25–30 minutes, flipping halfway through, until golden and tender.
- Remove from the oven and toss with freshly chopped herbs before serving.
Notes
For an elegant presentation, drizzle extra pomegranate molasses and add feta or goat cheese on top.
