- 2 teaspoons cinnamon

- 1 cup canned pumpkin puree
- 2 cups milk (almond, oat, or cow’s milk)
- 1/2 cup maple syrup
- 2 eggs
- 1/2 cup chopped nuts (walnuts or pecans)
- Optional fruits (fresh or dried cranberries or apples)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the dry ingredients in a large bowl: oats, baking powder, and chosen spices.
- Blend the wet ingredients in a separate bowl: pumpkin puree, milk, eggs, and maple syrup.
- Combine the wet mixture with the dry ingredients until well mixed, then fold in nuts and fruits if using.
- Spread the mixture into a greased 8×8 inch baking dish.
- Bake for 30-35 minutes until the center is set and edges are golden.
- Let it cool slightly before serving.
- Serve warm, topped with yogurt or whipped cream and a sprinkle of cinnamon.
Notes
For a richer flavor, let the mixture rest overnight before baking. Adjust spices to personal taste.
