Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl: oats, baking powder, and chosen spices.
  3. Blend the wet ingredients in a separate bowl: pumpkin puree, milk, eggs, and maple syrup.
  4. Combine the wet mixture with the dry ingredients until well mixed, then fold in nuts and fruits if using.
  5. Spread the mixture into a greased 8×8 inch baking dish.
  6. Bake for 30-35 minutes until the center is set and edges are golden.
  7. Let it cool slightly before serving.
  8. Serve warm, topped with yogurt or whipped cream and a sprinkle of cinnamon.
