Ingredients

- 2 cups rolled oats
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 2 large eggs (or flax eggs for vegan)
- 1/4 cup unsalted butter (or coconut oil)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup milk (or dairy-free milk)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan.
- In a bowl, combine oats, pumpkin pie spices, and salt.
- In another bowl, whisk together pumpkin puree, maple syrup, melted butter, and eggs until smooth.
- Gradually add the dry oats mixture to the wet ingredients, stirring until well combined.
- Transfer the mixture into the prepared tart pan and spread it evenly.
- Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
- Let the tart cool before slicing. Serve warm with whipped cream or nuts on top.
Notes
For added flavor, mix in chopped nuts or dried fruit. Adjust baking times as per your oven.
