Instructions

  1. In a mixing bowl, combine pumpkin puree, sugar, cinnamon, nutmeg, and beaten egg. Mix until smooth. If craved, fold in cream cheese until well blended.
  2. Heat a skillet over medium heat and lightly brush the taco shells with oil. Warm each tortilla for about 30 seconds on each side until pliable.
  3. Spoon the pumpkin filling generously into each shell. Optionally add caramelized onions or sautéed mushrooms.
  4. Top with whipped cream or fresh pecans, and drizzle with maple syrup if desired.
