Instructions
- In a mixing bowl, combine pumpkin puree, sugar, cinnamon, nutmeg, and beaten egg. Mix until smooth. If craved, fold in cream cheese until well blended.
- Heat a skillet over medium heat and lightly brush the taco shells with oil. Warm each tortilla for about 30 seconds on each side until pliable.
- Spoon the pumpkin filling generously into each shell. Optionally add caramelized onions or sautéed mushrooms.
- Top with whipped cream or fresh pecans, and drizzle with maple syrup if desired.
- Serve the tacos on a platter with a bowl of optional toppings for customization.
