Description

Delicious and buttery Raspberry Linzer Cookies filled with sweet raspberry jam and dusted with powdered sugar, perfect for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup almond flour or ground almonds
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Prepare your ingredients by letting the butter sit out until it reaches room temperature.
  2. Cream the butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Combine the flour, ground nuts, and salt in a separate bowl and slowly add to the wet mixture until just incorporated.
  5. Chill the dough in plastic wrap in the refrigerator for at least 60 minutes.
  6. Roll out the dough on a floured surface to about 1/4-inch thick and cut out shapes.
  7. Bake at 350°F (175°C) for 10-12 minutes until lightly golden.
  8. Cool completely, then assemble with raspberry jam and dust with powdered sugar.
  9. Enjoy with a cup of tea or coffee!

Notes

Ensure the dough chills properly to avoid spreading while baking. Use high-quality jam for the best flavor.
