- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup almond flour or ground almonds
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Prepare your ingredients by letting the butter sit out until it reaches room temperature.
- Cream the butter and granulated sugar together until light and fluffy, about 3-5 minutes.
- Add the egg and vanilla extract, mixing until well combined.
- Combine the flour, ground nuts, and salt in a separate bowl and slowly add to the wet mixture until just incorporated.
- Chill the dough in plastic wrap in the refrigerator for at least 60 minutes.
- Roll out the dough on a floured surface to about 1/4-inch thick and cut out shapes.
- Bake at 350°F (175°C) for 10-12 minutes until lightly golden.
- Cool completely, then assemble with raspberry jam and dust with powdered sugar.
