- 1 lb Lean Ground Turkey
- 1 Onion, diced

Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the butternut squash by cutting it in half lengthwise, scooping out the seeds, and chopping it into bite-sized cubes.
- Roast the squash tossed with olive oil, cinnamon, nutmeg, salt, and pepper on a baking sheet for 25-30 minutes.
- Cook the ground turkey in a skillet over medium heat with diced onions and garlic until browned and fully cooked.
- Combine the roasted squash with the cooked turkey, mix well, and serve topped with fresh herbs.
Notes
For a vegetarian option, substitute ground turkey with a plant-based alternative. Sweet potatoes can replace butternut squash.
