  • 1 lb Lean Ground Turkey
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • Salt, to taste
  • Pepper, to taste
  • Fresh Rosemary or Thyme, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the butternut squash by cutting it in half lengthwise, scooping out the seeds, and chopping it into bite-sized cubes.
  3. Roast the squash tossed with olive oil, cinnamon, nutmeg, salt, and pepper on a baking sheet for 25-30 minutes.
  4. Cook the ground turkey in a skillet over medium heat with diced onions and garlic until browned and fully cooked.
  5. Combine the roasted squash with the cooked turkey, mix well, and serve topped with fresh herbs.

Notes

For a vegetarian option, substitute ground turkey with a plant-based alternative. Sweet potatoes can replace butternut squash.
