- 1 butternut squash
- 1 head of garlic
- 3 tablespoons butter
- 1/2 cup cream or milk (non-dairy alternatives work too)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds.
- Place the squash halves face down on a baking sheet and drizzle with olive oil, salt, and pepper.
- Wrap unpeeled garlic cloves in foil and set alongside the squash.
- Roast for about 40 minutes or until the squash is very tender and the garlic has caramelized.
- Allow the squash and garlic to cool slightly before scooping the flesh into a mixing bowl.
- Add butter and cream (or milk) to the bowl. Mash until smooth for a creamy consistency.
- Taste and adjust seasoning as desired.
- For an extra touch, garnish with fresh herbs or a sprinkle of parmesan cheese before serving.
Notes
Can substitute butternut squash with sweet potatoes or pumpkin. Fresh herbs like rosemary or thyme can enhance flavor, and a dash of nutmeg adds an interesting twist.
