  • 1 butternut squash
  • 1 head of garlic
  • 3 tablespoons butter
  • 1/2 cup cream or milk (non-dairy alternatives work too)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves face down on a baking sheet and drizzle with olive oil, salt, and pepper.
  4. Wrap unpeeled garlic cloves in foil and set alongside the squash.
  5. Roast for about 40 minutes or until the squash is very tender and the garlic has caramelized.
  6. Allow the squash and garlic to cool slightly before scooping the flesh into a mixing bowl.
  7. Add butter and cream (or milk) to the bowl. Mash until smooth for a creamy consistency.
  8. Taste and adjust seasoning as desired.
  9. For an extra touch, garnish with fresh herbs or a sprinkle of parmesan cheese before serving.
