Ingredients

- 2 lbs fresh tomatoes (heirloom or cherry), halved
- 1 medium yellow onion, cut into wedges
- 4 cloves garlic, whole
- 3 tablespoons extra virgin olive oil
- 3 cups vegetable or chicken broth
- 1/4 cup fresh basil, chopped
- Salt, to taste
- Freshly cracked pepper, to taste
- Red pepper flakes, optional
- Heavy cream or coconut milk, optional for creaminess
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the tomatoes by halving them and laying them cut side up on a baking sheet. Scatter whole garlic cloves and onion wedges around them.
- Drizzle everything with olive oil and sprinkle with salt and pepper. Add red pepper flakes if desired.
- Roast in the oven for 25-30 minutes until tomatoes are caramelized and tender.
- Transfer the roasted ingredients to a blender. Add broth and fresh basil, and blend until smooth, adjusting consistency with more broth as needed.
- Taste and adjust seasoning, adding salt, pepper, or a splash of vinegar as needed. For creaminess, mix in heavy cream or coconut milk at this stage.
- Serve hot, garnishing with fresh basil, a drizzle of olive oil, or a dollop of sour cream.
Notes
