Description

A comforting and velvety Roasted Tomato Soup that brings warmth and joy to every meal.


Ingredients

  • 2 lbs fresh tomatoes (heirloom or cherry), halved
  • 1 medium yellow onion, cut into wedges
  • 4 cloves garlic, whole
  • 3 tablespoons extra virgin olive oil
  • 3 cups vegetable or chicken broth
  • 1/4 cup fresh basil, chopped
  • Salt, to taste
  • Freshly cracked pepper, to taste
  • Red pepper flakes, optional
  • Heavy cream or coconut milk, optional for creaminess

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the tomatoes by halving them and laying them cut side up on a baking sheet. Scatter whole garlic cloves and onion wedges around them.
  3. Drizzle everything with olive oil and sprinkle with salt and pepper. Add red pepper flakes if desired.
  4. Roast in the oven for 25-30 minutes until tomatoes are caramelized and tender.
  5. Transfer the roasted ingredients to a blender. Add broth and fresh basil, and blend until smooth, adjusting consistency with more broth as needed.
  6. Taste and adjust seasoning, adding salt, pepper, or a splash of vinegar as needed. For creaminess, mix in heavy cream or coconut milk at this stage.
  7. Serve hot, garnishing with fresh basil, a drizzle of olive oil, or a dollop of sour cream.

Notes

Serve with homemade croutons or a grilled cheese sandwich for the perfect pairing.
