Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/2 cup heavy cream
  • 1 teaspoon coarse sea salt (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a rimmed baking sheet with butter or line it with parchment paper.
  2. Prepare your apples by peeling, coring, and dicing into small pieces. Toss with a sprinkle of lemon juice.
  3. Cream together the unsalted butter and sugars until light and fluffy.
  4. Add the eggs, one at a time, mixing well, then incorporate the vanilla extract.
  5. Whisk together the dry ingredients in a separate bowl and add to the wet ingredients, alternating with buttermilk.
  6. Fold in the diced apples gently.
  7. Pour the batter into the prepared baking sheet and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Make the salted caramel by combining sugar and water in a saucepan, stirring until dissolved, then simmer until deep amber.
  10. Remove from heat and add heavy cream slowly, stirring constantly, followed by a pinch of salt.
  11. Drizzle the salted caramel over the cooled cake and allow it to set.
