- 4 cups apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup brown sugar
- 3 large eggs
- 1 cup unsalted butter, softened
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1/2 cup heavy cream
- 1 teaspoon coarse sea salt (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a rimmed baking sheet with butter or line it with parchment paper.
- Prepare your apples by peeling, coring, and dicing into small pieces. Toss with a sprinkle of lemon juice.
- Cream together the unsalted butter and sugars until light and fluffy.
- Add the eggs, one at a time, mixing well, then incorporate the vanilla extract.
- Whisk together the dry ingredients in a separate bowl and add to the wet ingredients, alternating with buttermilk.
- Fold in the diced apples gently.
- Pour the batter into the prepared baking sheet and spread evenly.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Make the salted caramel by combining sugar and water in a saucepan, stirring until dissolved, then simmer until deep amber.
- Remove from heat and add heavy cream slowly, stirring constantly, followed by a pinch of salt.
- Drizzle the salted caramel over the cooled cake and allow it to set.
