- 2 pounds beef (chuck or stew meat)
- 4 cups apple cider
- 8 ounces mushrooms (cremini or shiitake)
- 3 carrots, chopped
- 2 potatoes, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Sear the meat: In a large Dutch oven, heat olive oil over medium-high heat. Add beef chunks and sear until browned on all sides.
- Remove the beef from the pot and set it aside. In the same pot, add chopped onions and sauté until translucent.
- Add minced garlic and mushrooms, cooking until tender and slightly caramelized.
- Deglaze the pot: Pour a splash of apple cider, scraping up any flavorful bits.
- Combine the beef with carrots, potatoes, beef broth, apple cider, fresh herbs, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours.
- Check for seasoning and adjust if necessary. Remove herb stems and bay leaves before serving.
Notes
Serve with crusty bread or buttery biscuits. Pairs well with a side salad and red wine.
