  • 4 cups apple cider
  • 8 ounces mushrooms (cremini or shiitake)
  • 3 carrots, chopped
  • 2 potatoes, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Sear the meat: In a large Dutch oven, heat olive oil over medium-high heat. Add beef chunks and sear until browned on all sides.
  2. Remove the beef from the pot and set it aside. In the same pot, add chopped onions and sauté until translucent.
  3. Add minced garlic and mushrooms, cooking until tender and slightly caramelized.
  4. Deglaze the pot: Pour a splash of apple cider, scraping up any flavorful bits.
  5. Combine the beef with carrots, potatoes, beef broth, apple cider, fresh herbs, salt, and pepper.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours.
  7. Check for seasoning and adjust if necessary. Remove herb stems and bay leaves before serving.
