- 2 large carrots, diced
- 1 medium zucchini, diced
- 2 bell peppers, diced
- 2 cups fresh spinach
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 teaspoon fresh thyme, chopped
- 1/4 cup fresh parsley, chopped
- 6 cups vegetable or chicken broth
- 2 tablespoons extra virgin olive oil

- Red pepper flakes (optional)
Instructions
- Wash and chop all your vegetables, keeping them uniform in size.
- In a large pot, heat olive oil over medium heat and sauté onions and garlic until translucent (about 5 minutes).
- Add carrots and bell peppers, cooking for another 5-7 minutes before incorporating zucchini and tomatoes.
- Pour in the broth and bring to a gentle boil.
- Add fresh herbs, salt, pepper, and red pepper flakes if desired.
- Reduce heat and let the soup simmer for 20-30 minutes to meld flavors.
- Stir in fresh spinach before serving, simmering for a few more minutes until wilted.
- Ladle soup into bowls, garnishing with olive oil and parsley.

You can substitute vegetables based on availability. For a thicker soup, blend a portion and return it to the pot.
