  • Salt and pepper to taste
  • Optional: sautéed bell peppers, spinach, or black beans

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork. Place on a baking sheet and bake for 45-60 minutes until tender.
  3. Heat a skillet over medium heat, add olive oil, and sauté the diced onion until translucent.
  4. Add minced garlic and cook until fragrant.
  5. Add ground turkey and cook until browned, about 5-7 minutes. Season with salt, pepper, and herbs.
  6. Stir in optional ingredients like bell peppers or spinach and cook for another 2-3 minutes.
  7. Slice each baked sweet potato in half lengthwise and mash the flesh slightly.
  8. Fill each half with the turkey mixture, then sprinkle cheese on top.
  9. Return to the oven for 10-15 minutes until cheese is melted and bubbly.
  10. Allow to cool slightly before serving and garnish with fresh herbs.
