Ingredients

  • 1 lb lean ground turkey
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 tbsp olive oil
  • Optional add-ins: 1 cup black beans or corn

Instructions

  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Wash and pierce sweet potatoes with a fork. Roast in the oven for 45-60 minutes until tender.
  3. In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent.
  4. Stir in ground turkey, adding cumin, paprika, and black pepper. Cook until browned and cooked through.
  5. In the last minute, fold in chopped herbs and optional add-ins.
  6. Once sweet potatoes are cooked, let cool slightly, then slice in half and scoop out some flesh.
  7. Fill each potato with the turkey mixture, packing it in, and return to the oven for an additional 10 minutes.
  8. Serve hot, garnished with more herbs and a drizzle of olive oil if desired.

Notes

For added richness, you could sprinkle some cheese on top before returning the potatoes to the oven.
