- 4 medium sweet potatoes
- 1 lb lean ground turkey
- 2 cloves garlic, minced
- 1 medium onion, diced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/4 cup fresh parsley or cilantro, chopped
- 1 tbsp olive oil
- Optional add-ins: 1 cup black beans or corn
Instructions
- Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Wash and pierce sweet potatoes with a fork. Roast in the oven for 45-60 minutes until tender.
- In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent.
- Stir in ground turkey, adding cumin, paprika, and black pepper. Cook until browned and cooked through.
- In the last minute, fold in chopped herbs and optional add-ins.
- Once sweet potatoes are cooked, let cool slightly, then slice in half and scoop out some flesh.
- Fill each potato with the turkey mixture, packing it in, and return to the oven for an additional 10 minutes.
- Serve hot, garnished with more herbs and a drizzle of olive oil if desired.
Notes
For added richness, you could sprinkle some cheese on top before returning the potatoes to the oven.
