Ingredients

- 2 tablespoons olive oil
- 1 chopped onion
- 3 cloves minced garlic
- 2 diced carrots
- 2 chopped celery stalks
- 1 can (14 oz) diced tomatoes, juice included
- 4 cups vegetable or chicken broth
- 1 cup chopped kale
- 1 can (15 oz) drained cannellini beans
- 1 teaspoon dried oregano
- 1 teaspoon fresh thyme
- Fresh sprigs of rosemary
- Salt and pepper to taste
- Pinch of red pepper flakes
- Squeeze of lemon for freshness
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add 1 chopped onion and sauté for about 5 minutes until translucent.
- Next, add 3 cloves of minced garlic and sauté for an additional minute.
- Toss in 2 diced carrots and 2 chopped celery stalks, stirring occasionally.
- Cook for another 5 minutes until they soften.
- Add 1 can (14 oz) of diced tomatoes and 4 cups of broth.
- Bring it to a gentle simmer.
- Stir in 1 cup of chopped kale and 1 can (15 oz) of drained cannellini beans.
- Season with 1 teaspoon of oregano, 1 teaspoon of thyme, and a couple of sprigs of rosemary.
- Simmer on low heat for about 20 minutes.
- Before serving, adjust seasoning to your preference and add a squeeze of lemon.
Notes
Allow the soup to simmer for longer if you prefer a thicker consistency. Taste frequently to adjust seasonings.
