- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 4 cloves garlic, minced
- 1 large onion, chopped
- 2 cups beef broth (low-sodium)
- 2 sprigs rosemary (fresh)
- 2 sprigs thyme (fresh)
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 325°F (163°C).
- Season the chuck roast generously with salt and pepper on all sides.
- Heat a tablespoon of olive oil over medium-high heat in a large, oven-proof skillet.
- Add the chuck roast and sear on all sides until brown, about 3-4 minutes per side.
- Remove the roast, then add more oil if needed, and sauté the chopped onions until translucent.
- Add minced garlic and cook until fragrant.
- Stir in cranberry sauce, balsamic vinegar, and beef broth, scraping the bottom to deglaze.
- Return the roast to the skillet, sprinkle fresh herbs on top, and cover.
- Braise in the preheated oven for 2.5 to 3 hours until fork-tender, basting halfway.
- Remove from the oven and let it rest for 15 minutes before slicing against the grain.
